Quick Brownie Sundae's in a Bowl!

I have this wonderful thing about me... I love to snack at night, but once the kitchen is closed I don't like to open it up and spend an hour making goodies for the family. 

So I was sitting in my chair one night and the urge to snack hit me, so did the lazy bone that didn't want to spend a long time baking up the kitchen. Then it HIT me... brownie sundaes... but how to make them without much of a mess. And that is when I remember seeing a recipe for brownies in a mug, and then I remembered the ice cream in the deep freeze and it was ON! 

I dug out the brownie mix and followed the directions on the box, put 2 spoonfuls in each bowl. 
Easy peasy!


 After I microwaved it for 1:20 mins each (no more than 2 mins, the brownie will start to burn)
 I scooped out the ice cream and
Sa-Zam! Brownie Sundeas in about 5 mins! The kids knew they loved me for a reason!

Careful putting your cold ice cream in a bowl straight out of the microwave, if it is glass or ceramic it can crack if the cold ice cream causes it to cool too quickly!



These would have been great with some chocolate sauce or sprinkles but was perfect just 
the way it was! 


When the late night munch monster hits you and you want something quick and yummy grab your brownie mix and hit the microwave.

Waffle Iron Omelets

Late the other night I caught an infomercial on tv and I thought I was dreaming. They were placing all sorts of crazy things in, of all things, a waffle maker! I love thinking outside the box and they were thinking way outside of the waffle! So I asked Santa for a waffle maker for Christmas, and because I was so good all year, I received exactly what I had asked for. 

The one thing I could not wait to try was the omelet. I like omelets but never have good luck getting them to cook correctly in the pan. I have tried all sorts of pans. I tried a large skillet, a small skillet, a wok, and my trusty old iron skillet and all I managed to create was over cooked eggs with runny middles and fillers that were not cooked correctly. I was never able to flip them to cook on both sides without ruining them. I started to believe that omelets were my not forte! 

So I went to the store and purchased all the necessary omelet items. I purchased ham, mushrooms, tomatoes, and bell peppers, and of course eggs... all my families favorites. There are so many options that could have been added but these were things I knew they would like to eat. I pre-chopped everything to have it ready to quickly place on the waffle iron. I also preheated the iron and used a 2 cup measuring cup to have my eggs mixed up in. I did 2 eggs at a time, other recipes that I found used 3 but that was too many for my waffle maker. 

So with my goodies all chopped up and my 2 eggs scrambled up in my measuring up I sprayed the waffle iron and added the mix-ins directly to the iron. I like for my veggies to be cooked some and this worked out perfect to soften them up some prior to adding the eggs. I went ahead and let them cook for about 2-3 minutes and then poured the eggs over slowly to each waffle section being careful not to let it over flow. 




I closed the waffle iron but do not suggest flipping it if you have one that turns over. The eggs run out and fluff up and it is a mess! I used a plastic spatula to remove them so I didn't scratch my waffle iron with a metal utensil. 

Of course they looked so good that I forgot to take a final picture but they looked like waffle omelets just as expected! They were yummy and the family ate them up and asked for more! You can easily come up with tons of variations so have fun with it! The only recommendation I would make is place cheese on last, I didn't add cheese but I would think it might cause sticking problems!
